Current projects

The current research concern the following problems: the non-enzymatic glycated pea proteins as factors modifying the physiological activity of selected microflora of the human gastrointestinal tract; the content of opioid peptides in high – protein formulas for sportsmen and their influence on their physical condition; the influence of temperature and high pressure on the glycation of plant globulins with allergic properties; investigation  of the interactions of probiotic Bifidobacterium with different adhesion properties with healthy and pathologically changed a mice mucosa; preparation of a fermented milk product with the reduced immunoreactivity to be used in hospitals and allergy clinics for oral immunotherapy of patients; characterization of the immunoreactive and allergic properties of buckwheal proteins.

The research are carried out within the following national and international projects:

  • “Polymorphism of beta-casein on the content of beta-casomorphins-5 and -7 in cow milk”(MNiSzW);

  • “The Prevalence, Cost and Basis of Food Allergy Cross Europe”(Integrated Project of the European Union “EuroPrevall” also supported by MNiSzW);

  • “The evaluation of the possibility of the immunomodulation of the allergic organisms to the peanut allergens”(MNiSzW);

  • “Modulation of the immune response of the gastrointestinal tract mucosa of mice”(MNiSzW);

  • “The application of the cross linking enzymatic preparation to decrease allergic properties of milk protein”(MNiSzW).
